Try this delicious and refreshing salad with the last of your summer crop!


1 cup raw green beans
½ tsp. olive oil
½ tsp. canola oil
1 Tbsp. balsamic vinegar
1 garlic clove, chopped
4-5 cherry tomatoes
dash lite salt
dash pepper

Wash green beans and cut off ends. Steam beans until al dente. Drain, cool and place in bowl. Add the two oils, vinegar and garlic. Season with lite salt and pepper to taste. Add tomatoes and refrigerate.
